Tofu Sandwich Extraordinaire

As a ‘mostly’ plant eating vegan, I’m always on the lookout for extra yummy recipes full of fabulous nutrition and flavour.

I’ve found many exciting recipes, especially for main meals. However, the sandwich arena had alluded me, until now.

Enter the ‘Tofu Sandwich Extraordinaire’.

Take 100 grams / 3.5 ounces of firm or extra firm tofu. Give it a squeeze in some kitchen paper, or a cloth, to remove the excess liquid.

Now mash it with a fork or a potato masher until it resembles fine crumbs. Then place the tofu crumb mix into a sealable jar.

Mix together a marinade consisting of:

1 – 2 teaspoons of Balsamic Vinegar

1 teaspoon of Tamari or Soy Sauce &

1 small clove of garlic (minced) – or garlic powder

1/2 – 1 teaspoon of Maple Syrup – or your favourite sweetener

This is my favourite mix; however, you can add any herbs and spices of your choice. Yum!

Now pour the liquid marinade over the tofu crumb, seal and shake the jar ensuring the marinade coats every morsel. Now place the jar into your fridge for 24 – 48 hours. I gave the jar a little shake a few hours before making the sandwich ensuring each crumb was well coated.

This is where your imagination takes control. I used a toasted wholemeal and seed mixed bread that has 5 grams of protein per slice. So many choices! A bun, a croissant, a wrap; the list is endless.

Do use whatever fillings are your favourite. Once again there are so many wonderful choices.

Onto the bread I firstly spread a good helping of avocado. Over this came a few Cos (Romaine) lettuce leaves, and then the marinated tofu – finishing with a good helping of pepper.

I was so surprised. It tasted so good; and was so nutritious to boot. I immediately got to work on the next marinade. It awaits my future pleasure. 😋

    1. Silly me, Dorothy, I didn’t take a picky of the sandwich; I truly didn’t believe it was worth it – until I’d taken a bite! The image I’ve used is from Pixabay. And yes, the bread is divine. It looks very similar to the Pixabay pic; full of texture with seeds galore; so nutritious! (It’s a Burgen brand.)
      Hahah… I’m truly looking forward to the next one with, maybe, some different fillings… Drooling!!! lol

    1. I can recommend giving it a try, Rebecca; even meat eaters would be hard pressed to appreciate it is really tofu – it tastes a lot like minced meat.
      It can be baked or fried before eating, too. It doesn’t have to be, of course. But, for the sake of ‘normalcy’ for the vegan wary, this step can provide some comfort. Hahah…

      I was a veggie back in the 90s and loved creating recipes. Then, when I met K early 2003, I ate meat again. However, these days I have returned to the veggies and luv it. The Millennials and Gen Zs (online) have done the hard work; they have created very exciting meals – I just adjust the recipes to suit my taste. And wow, I luv the array of foodstuffs available today! I truly look forward to eating – not something I always loved. In general I used to think it somewhat of a chore and I’d get bored with the same old same old.
      But, not now… 😂💖😎

    1. Seed breads are fabulous. I don’t eat a lot of bread preferring to remain as ‘gluten-free’ as possible. However, if I am going to eat bread this is definitely the one I go for! I love texture. That goes for all the foods I eat. And this one does the job nicely!
